1. Bring cauliflower and water to a boil in giant saucepan over excessive warmth. Reduce warmth. Cover. Simmer 12 to 14 minutes, or till tender. Transfer cauliflower, any remaining water, and 1 cup milk into blender. Cover. Holding lid securely, course of till puréed.
2. Return cauliflower combination to saucepan. Add potatoes, all however 1/three cup inexperienced onions, garlic, and remaining 1 cup milk. Stir till blended. Cook on medium-low warmth 10 minutes. Add margarine, salt, if desired, and pepper. Stir till margarine is melted. Garnish with equal quantities bitter cream, cheese, and remaining inexperienced onions.
Tip: To make 2 cups nutritious mashed potatoes, mash 1 pound boiled baking potatoes with 2 tablespoons food plan margarine and 1/four to 1/three cup fat-free (skim) milk.
