1. Combine flour, bran, baking soda, and salt in medium bowl; put aside.
2. Beat butter and sugar in giant bowl with electrical mixer at medium pace 1 minute, or till creamy. Add applesauce, egg white, and vanilla. Beat at low pace simply till blended; beat at medium pace till easy.
three. Gradually add flour combination to butter combination, beating at low pace till effectively blended. Divide dough in half. Shape every half into 11-inch log. Wrap in plastic wrap; freeze not less than 1 hour.
Four. Preheat oven to 350°F. Cut logs crosswise into 1/Four-inch slices, turning log barely after every slice to maintain slices spherical. Dip half of 1 facet of every cookie into adorning sugar. Place cookies, sugar facet up, on cookie sheets.
5. Bake 6 to eight minutes, or till set. Cool on cookie sheets 2 minutes. Remove to wire racks to chill fully.
