1. Heat oil in giant saucepan over medium warmth till scorching. Add bell pepper, onion, cucumber, and garlic; cook dinner and stir till pepper and onion are tender. Add contemporary and canned tomatoes, vinegar, cumin, coriander, pepper, and salt. Bring to a boil over excessive warmth. Reduce warmth to low; simmer, lined, 15 minutes. Remove from warmth; cool.
2. Place tomato combination in meals processor or blender; course of in small batches till clean. Return to saucepan. Bring to a boil over excessive warmth. Add pasta; cook dinner four to six minutes, or till pasta is tender. Stir in water; switch to serving bowls.
